I was diagnosed with gluten sensitivity 9 months ago and have to be very careful about cross contamination. I haven't lived a fest gluten free, but I have been looking into food options that will give me protein. Shelton's makes a canned chicken that tastes pretty good. Also you can get dehydrated foods that are gluten free and just add boiling water to rehydrate them. http://www.trailfoodexpress.com/glutenfreeitems
A coleman stove or backpacking stove such as jetfoil will boil water fairly quickly.
I was wondering if re-washing the salad would be enough to de-contaminate any gluten?
I was thinking that if there are a lot of people with gluten sensitivity/celiac.. maybe fest could at least have a line of just gf pb, rice cakes, salad and fruit?
